Inspired by our baker’s experience of making sourdough breads in Provence and Stuttgart, these crackers are based on the flavour and texture of freshly baked crusts. Think “Pain au Levain” and “Sauerteig” transformed into a thin, crisp bite. A naturally cultivated spelt sour starter from a wild yeast culture is carefully tempered, fermented and refreshed over four days, then blended with wholemeal flour rooter in ancient grains. The result is a deeply flavourful cracker with natural sour notes.

The Fine Cheese Co, Sourdough cracker range is made only from natural ingredients. With sourdough made using our cultivated spelt sour starter from a wild yeast culture. That we slowly temper, ferment and refresh over four days. And bake on trays, just three packs at a time. Gently for no fewer than 30 minutes at 150°. To produce a thin and crisp cracker with a snap. Rustic in character.
